Tasting Notes

The Matys Cabernet Sauvignon/Merlot is a popular, modern-style and easy drinking wine that shows aromas of red ripe berries with hints of dark chocolate and lavender. The wine is lively on the palate, medium-bodied and finishing with subtle spicy undertones and soft tannins. The wine is an ideal partner to gatherings with friends and family.

 

Winemakers’ Notes

The components were harvested and vinified separately. Fermented in open fermenters for 5-7 days at 24-28oC. Punch-downs were done every 4 hours and then pressed at 5oB. 100% MLF completed spontaneously in tanks and racked into barrels. A few months in stainless steel tanks & wood maturation in older 225L French oak barrels.

The wine pairs well with grilled meats, hearty stews, pasta dishes and dishes that show a spicy edge.
